Sindhi Sai Bhaji Recipe is a traditional sindhi recipe which is a healthy and delicious dish famous in practically all Sindhi families. There are a number of sindhi dishes and recipes which are extremely healthy, delectable and mouth watering, yet sai bhaji is one such recipe which is not difficult to make and is served during any time of the day.

It is a basic recipe loaded with greens, lentils, vegetables and spices cooked in sindhi style. The excellence of Sindhi food is that its recipes are unique and straightforward, cooked with least flavors.

Sai Bhaji is one of my favorite recipes or dishes from the Sindhi cuisine. ‘Sai’ signifies green in sindhi and ‘Bhaji’ signifies vegetables. The cooking process is simple and consumes less time, you can serve with roti and rice. But if you want to go for a traditional sindhi lunch or dinner, you can serve sai bhaji with Sindhi Koki or Bugha Chawal and papad.

Sai Bhaji is made of four key ingredients, spinach, greens, vegetables and lentils, In addition to spices. Each of these ingredients has a role to play that makes this recipe popular in sindhi community. There are different ways and variations of sai bhaji like one prepared with tur dal, yellow moong dal (yellow lentils) or pink masoor dal (orange lentils), but my favorite is the one prepared with chana dal (split chickpeas lentils).

Finally add tadka (Tempering) which is prepared separately with chopped garlic, red chili and oil. It is poured over the bhaji to give a final touch of flavour which enhances the taste and aroma of this delicious recipe.

This is one of my favorite dish which I prepare very often, do try this Sai Bhaji recipe today, I am sure you will love it. You can also store it for two to three days in airtight container and place it in the refrigerator. When you feel like having it just reheat on a medium flame stirring occasionally. Alternatively, you can also reheat it in the microwave for one or two minutes.

It is also low in calories which helps in losing weight and helps in keeping a healthy digestive system.

The Spinach and lentils included in this recipe likewise give a decent amount of protein, iron and fiber. By including these in your diet, it not only helps in production of red blood cells but also keeps you healthy.

Tips for perfect cooking

  • Make sure you use fresh spinach, sorrel (khatta palak) and dill.
  • It should be properly washed and cleaned.
  • Chop all the greens finely.
  • Ensure that the greens are mashed properly.
  • Cook on low medium flame.

Sindhi Sai Bhaji Recipe

Sindhi Sai Bhaji is an extremely good to taste healthy vegetarian recipe showcasing sindhi cuisine. This dish is a complete meal in itself, it is packed with green vegetables, lentils, and spices.

Ingredients  

  • 100 Grams Spinach
  • 100 Grams Dill leaves
  • 100 Grams Green sorrel leaves
  • Wash well and chop finely
  • 3 Nos Medium onions finely chopped
  • Tomato puree - made of four medium tomatoes
  • 1/2 Cup  Chana Dal washed and soaked for 30 minutes
  • 1 Tsp Red chilli powder
  • 1 Tsp Turmeric powder
  • 1 Tsp Coriander powder
  • 1 Tbsp Ginger garlic paste
  • 1 Chopped green chilli
  • Salt to taste
  • 2 Tbsp Tbsp oil

Ingredients For Prepration Of Tadka

  • 1 Tbsp Tbsp oil
  • 3-4 Nos Cloves of chopped garlic
  • 1 Tsp Red chilli powder

Instructions 

  • Heat oil in a pressure cooker.
  • Once the oil is heated add chopped onions and saute until golden brown.
  • Add ginger garlic paste and give it a mix.
  • Add spinach, sorrel and dill leaves
  • Add chana dal, green chilli and mix for a minute or two.
  • Add red chilli powder, turmeric powder, coriander powder and salt to taste.
  • Now mix all the spices and ingredients well.
  • Add tomato puree and mix well on high flame for two minutes.
  • Add two cups of water and mix slightly.
  • Close the lid and cook for 4-5 whistles.
  • After 4-5 whistles turn off the flame and let the pressure release.
  • Open the lid, give it a mix and mash it slightly with a wooden masher.
  • The tasty sai bhaji is now ready, remove it in a serving bowl.

Prepration Of Tadka

  • In a small tadka pan, heat one tbsp oil.
  • Add 3 to 4 cloves of chopped garlic.
  • Fry until it changes color.
  • Turn off the flame, add one tsp red chilli powder.
  • Give it a mix, the tadka is now ready.
  • Add the tadka (tampering) to the sai bhaji.
  • You can serve it with roti or rice.
