Sindhi Koki Recipe
Ingredients
- 1 Cup / 125 Grams Whole wheat flour
- 1 Nos Medium sized onion finely chopped
- 1 Tsp Kashmiri red chilli powder
- Few coriander leaves
- Salt to taste
- 1-2 Nos green chillies
- 4-51 Tbsp Tbsp oil
Instructions
For preparation of dough:
- In a mixing bowl add onion, salt, red chilli powder & mix well
- Now add coriander leaves, green chilli, wheat flour, 2 tbsp oil and mix again
- See that the texture is crumbly which makes the koki crispy
- Add water in portions to make a stiff dough
- Add 1/2 tsp oil - give it a mix and let it rest for 10 minutes
Preparing Koki:
- Divide the dough into three equal portions - In a ball shape
- Apply some oil in the rolling board
- Take one portion or ball - wiith your hand or a rolling pin flatten it lightly
- Roll it with a rolling pin to give a chapati shape
- Roll it slightly and do not make it thin
- In similar manner roll out the remaining balls
- Heat a tawa on a medium flame and add oil
- You can also use ghee or butter instead of oil
- Place the koki on the tawa and let it cook until crisp
- Flip over and cook the other side as well
- Add few drops of oil on the sides and top and flip over and cook until crisp on both sides
- Remove it in plate and prepare the remaining in a similar manner
- Crispy koki is now ready - you can serve it with curd, papad, pickle or chutney
