In a bowl add 1 1/2 cup leftover cooked rice.
Add three medium sized boiled potatoes and mash it properly.
Add one small onion finely chopped.
Add Three Tbsp capsicum finely chopped.
Add Three Tbsp carrot finely chopped.
Add Three Tbsp carrot finely chopped.
Add Few coriander leaves.
Add one chopped green chilli.
Salt as per required.
Add 1 Tsp kashmiri red chilli powder.
1/2 Tsp cumin powder.
1/2 Tsp chaat masala.
1 Tbsp ginger garlic paste.
2 Tbsp corn flour.
Now mix all the ingredients well.
Once the mixture is ready and well combined - Rub little oil on your palms.
Take a portion of mixture, flatten it and give a round shape - coat it in semolina.
Now prepare the remaining in similar manner.
Once ready - heat oil in a pan, shallow fry the cutlets on medium flame.
Fry until crisp and gloden brown.
Flip over and fry both the sides.
Remove it in a paper towel and repeat the process until all cutlets are ready.
Serve it with green chutney or tomato sauce.
